Oat and Banana Muffins

To make four medium sized muffins:-

Whisk one egg.

To the egg, fold in one large dessert spoonful of Greek yoghurt, a large dessert spoonful of maple syrup, 80g oats (I use organic gluten free by buywholefoodsonline), a tsp of baking powder (I use gluten free by freee), a pinch of salt, and vanilla essence to taste ( I used 6 drops of organic vanilla CO2 extract 5% in organic sunflower oil by NHR Organics). Option to add a handful of sunflower seeds - I use activated organic ones by Lifeforce Organics.  

Allow mixture to sit for 20 mins to soften oats and seeds if included.  

Mash in one large or two small ripe bananas.

Spoon mixture evenly into medium muffin parchment papers. Bake for approximately 25 minutes at a medium heat. 

Allow to cool. Muffins should be firm on the outside and chewy on the inside. 😋 🍌
